Nourishing Rose Mastika Marshmallows

Most of us grew up thinking marshmallows were just fluffy sugar bombs that belong in hot chocolate or on top of sweet potatoes. And honestly… the ones at the grocery store usually are. They’re mostly corn syrup, refined sugar, and stabilizers.
But marshmallows didn’t start that way.
The original marshmallow was actually made with marshmallow root, a medicinal plant used for centuries to soothe digestion and support the throat and gut lining. The plant creates a naturally silky texture when mixed with water, which is what inspired the soft, cloud-like treat we know today.
Once I realized that, I started experimenting with making my own marshmallows at home — using real ingredients that actually support the body instead of just adding more empty sugar to the day.
What I discovered was surprisingly simple:
Homemade marshmallows can become a functional food — something that feels indulgent but quietly supports digestion, brain health, and overall vitality.
And the best part?
They’re much easier to make than people think.
The Benefits of Homemade Marshmallows
When you make them yourself, marshmallows can become a nutrient-rich treat instead of a processed dessert.
Here are a few of the ingredients I love adding.
Marshmallow Root
This herb is famous for its soothing mucilage, which coats and calms the digestive tract. It has been used traditionally to support gut health, sore throats, and inflammation.
Acacia Fiber
Acacia is a prebiotic fiber, meaning it feeds beneficial gut bacteria. A healthy microbiome supports digestion, immunity, and even mood.
Lion’s Mane Mushroom
Lion’s Mane is known for supporting memory, focus, and nerve regeneration. Many people use it to support long-term brain health.
Reishi Mushroom
Reishi is often called the “mushroom of calm.” It helps the body adapt to stress and supports immune function.
Skullcap
If your brain runs at full speed all day — thinking, planning, worrying, replaying conversations — skullcap is one of the most underrated herbs for calming the nervous system.
Skullcap has traditionally been used to help the body unwind without making you feel foggy or sedated. It’s especially loved by people whose stress shows up as mental tension, overthinking, or tight shoulders.
Blue Lotus
Blue lotus has been used for thousands of years in Egyptian and Eastern traditions for relaxation, dream states, and ceremonial use.
Unlike heavy sedatives, blue lotus creates a soft, floating calm. People often describe it as peaceful, reflective, or slightly euphoric — like the body relaxing into a warm bath.
Paired with cacao, it becomes a beautiful evening ritual.
Ashwagandha
Ashwagandha is an adaptogenic root that helps the body balance stress hormones and restore energy.
Mastika (Mastic)
Mastika is a rare aromatic resin harvested from the mastic tree on the Greek island of Chios and has been used for thousands of years as both a digestive remedy and a culinary ingredient.
It contains natural compounds that help support gut health, soothe the stomach lining, and balance the microbiome, which is why it has traditionally been chewed or infused after meals.
Mastika is also known for its antimicrobial and anti-inflammatory properties, making it helpful for oral health and digestion.
Beyond its wellness benefits, it adds a beautiful subtle pine-vanilla aroma that gives foods and drinks a distinctive Mediterranean character.
When used in functional treats like marshmallows, mastika quietly supports digestion while adding a refined, almost sacred flavor that feels both ancient and luxurious.
Natural Sweeteners
Instead of corn syrup, this recipe uses dates, apples, and beet powder, which provide minerals, antioxidants, and fiber along with natural sweetness.
Nourishing Rose Mastika Marshmallows
These marshmallows melt beautifully into hot cacao, tea, or coffee, turning a simple drink into a nourishing ritual.
And remember you don’t need to have all the ingredients ! Be creative - use less or more of whatever you want - sometimes I don’t even measure. Just stay in the range 700 g liquid 40 g solid.
Most of all do it with love and fun.
Ingredients
600 g apple purée
100 g marshmallow root water
40 g gelatin powder
1 tsp acacia fiber
1 tsp lion’s mane tincture
1 tsp reishi tincture
1 tsp skullcap tincture
½ tsp blue lotus tincture
¼ tsp ashwagandha powder
6 soft Medjool dates
½ tsp beet powder
1 tsp rose water
½ tsp mastika powder
Preparing the Marshmallow Root Water
Marshmallow root works best as a cold soak rather than boiling it.
Place about 2 tablespoons dried marshmallow root in a glass jar.
Fill the jar with spring water.
Let it sit overnight (8–12 hours).
During this time the water becomes slightly thick and silky as the plant releases its natural mucilage.
In the morning the root will settle at the bottom.
Simply pour off the liquid from the top and use this in the recipe.
This liquid is what gives the marshmallows their digestive-supporting properties.
Preparation
1. Blend the Base
In a high-speed blender (like a Vitamix) combine:
• apples
• marshmallow root water
• dates
• beet powder
• rose water
• mastika powder
• acacia fiber
• ashwagandha
• lion’s mane tincture
• reishi tincture
• skullcap tincture
• blue lotus tincture
Blend until completely smooth.
Continue blending until the mixture becomes very warm and almost reaches a boil.
The heat helps dissolve the ingredients and prepares the mixture for gelatin activation.
2. Add Gelatin
Add the 40 g gelatin powder and blend briefly so it dissolves evenly.
3. Whip the Marshmallow
Transfer the mixture into a stand mixer.
Whip on high speed for 10–20 minutes.
During this time the mixture will transform:
liquid → foam → thick marshmallow cream
You’ll know it’s ready when it forms stable peaks, similar to whipped meringue.
4. Set the Marshmallows
Line a square baking pan with parchment paper.
Pour the marshmallow mixture into the pan and smooth the surface.
Let it sit 4–6 hours until fully set.
5. Cut or Mold
Once firm, cut into square marshmallows.
You can also pour the mixture into molds if you prefer shapes like:
• cubes
• hearts
• gummy-bear molds
How to Use Them
These marshmallows are designed to melt slowly into hot drinks.
Drop one into:
• ceremonial cacao
• tea
• coffee
As it melts, the herbs and plant compounds dissolve into the drink, adding subtle sweetness and functional benefits.
